Ingredients

  • 500 g beef mince
  • ¼ of a small potato, finely grated
  • 2 tbsp Worcestershire sauce
  • 1 tbsp tomato paste
  • 1 tsp burger or braai seasoning
  • 4 burger buns
  • 4 slices real Gouda cheese
  • Lettuce leaves
  • 1–2 tomatoes, sliced
  • 15 g butter
  • 15 g flour
  • 200 ml milk
  • 75 g grated Gouda

Method

  1. 1

Mix the mince, grated potato, Worcestershire sauce, tomato paste and seasoning in a bowl.

  2. 2

Divide the mixture into four portions and roll each into a ball.

  3. 3

Melt the butter in a small saucepan. Stir in the flour and cook for about a minute.

  4. 4

Slowly whisk in the milk. Stir until smooth and thickened, then add the grated Gouda and stir until melted. Keep the sauce warm on low heat.

  5. 5

Heat a frying pan until hot. Add a mince ball and press it flat with a spatula to make a thin patty. Cook for about 2–4 minutes per side, until cooked through.

  6. 6

Place a slice of Gouda on each patty near the end of cooking so it melts.

  7. 7

Toast the buns, then layer with lettuce, tomato, the cheesy patty and a spoonful of Gouda sauce.

Notes & tips

Grate the potato finely so it mixes evenly into the mince and helps bind the patties. Mix the mince gently; overmixing can make the burgers firm. Keep the patties in four portions. Press each one flat in the hot pan for that smash-burger style. Cook for about 2–4 minutes per side, depending on thickness, until the patties are cooked through. Use real Gouda slices for the burgers, then add the homemade Gouda sauce just before serving. If the cheese sauce gets too thick, stir in a small splash of milk over low heat.
