Frozen Strawberry Daiquiri

Ingredients

  • 50 ml white rum
  • 150 g frozen strawberries, hulled
  • 25 ml freshly squeezed lime juice
  • 15 ml simple syrup (equal parts sugar and water), plus more to taste
  • 50 g ice cubes, plus more if needed
  • 1 fresh strawberry, to garnish
  • 1 lime wedge, to garnish

Method

  1. 1

Add the rum, frozen strawberries, lime juice and simple syrup to a blender suitable for crushing ice.

  2. 2

Add the ice and blend until smooth and slushy. Stop and scrape down the sides if needed, with the blender switched off.

  3. 3

Taste and adjust with a little more syrup for sweetness or lime juice for tang. If too thick to blend, add a small splash of cold water; if too thin, blend in a little more ice.

  4. 4

Pour into a chilled cocktail glass. Garnish with a fresh strawberry and lime wedge, and serve immediately.

Tips

Frozen strawberries give a thicker drink without needing lots of ice. Sweetness varies between berries, so taste before adding extra syrup. To make simple syrup, dissolve equal amounts of sugar and water, then cool fully before using. For an alcohol-free version, replace the rum with 30–50 ml cold water or apple juice and adjust the sweetness. Contains alcohol: for adults only.
